so simple so light so versatile. so fresh and mild. i love this dressing on green salad, potato salad, as a dressing for a greek salad with tomatoes, olives, cucumber, avocado and feta cheese, and also as pictured here, with just some crunchy romaine lettuce and a few black olives.
lemon vinaigrette dressing
juice of 1 or two lemons
1 small garlic clove, peeled, chopped
1 tsp dijon mustard
1/4 cup parsley leaves
1/3 cup white wine or champagne vinegar
1/4 cup olive oil
blend ingredients in a blender. chill until ready to use. give a stir, then drizzle on fresh greens.
